Peaches in Ginger Syrup

Ingredients:
3/4 cup dry white wine
3/4 cup water
3/4 cup sugar
3/4 (2-inch) piece fresh ginger, coarsely grated
3/4 pound peaches
2 tablespoons fresh lemon juice
Directions:
1. Simmer wine, water, sugar, and ginger, stirring occasionally, until reduced to about 3/4 cup, about 15 minutes.
2. While syrup is simmering, slice peaches and toss with lemon juice.
3. Pour hot syrup through a fine sieve onto peaches, then stir.
4. Let stand 20 minutes.
5. Cooks' note: ·Peaches can stand in syrup, covered, up to 2 hours at room temperature.
