Ingredients:
8 ripe peaches, coarsely chopped (about 3 pounds)
1 small red pepper, cut into 1/4 inch dice
2 green onions, chopped
1/4 cup peach jam or 1/4 cup apricot jam
2 tablespoons balsamic vinegar
2 tablespoons olive oil
Directions:
1. In large bowl, toss ingredients until combined.
2. Cover and refrigerate until ready to serve or up to two days.
