Peach Salsa

Too many peaches? Put them up in this unusual, spicy salsa.
Ingredients:
6 cups prepared peaches (about 12 medium or 3 lb)
1 1/4 cups chopped red onions
4 jalapeno peppers
1 red pepper, chopped
1/2 cup loosely packed finely chopped fresh cilantro
1/2 cup white vinegar
2 tablespoons honey
1 clove garlic, finely chopped
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
Directions:
1. Blanch, peel, pit and chop peaches.
2. Measure 6 cups.
3. Combine peaches, onion, peppers, cilantro, vinegar, honey, garlic, cumin and cayenne pepper in a large stainless steel or enamel saucepan.
4. Bring to a boil, stirring constantly to prevent scorching.
5. Boil gently, stirring frequently, 5 minutes.
6. If bottling, process in usual way, processing for a further 10 minutes.
7. This will make approximately 4 pints of Salsa.
