One day I was looking for a different recipe to use some canned peaches.....found this yummy bread!
Ingredients:
1(16 oz)can sliced peaches
6 tablespoons butter, melted
2 eggs
1 tablespoon lemon juice
2 cups all purpose flour
3/4 cup sugar
3 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon salt
3/4 cup chopped pecans
2 tablespoons peach preserves
Directions:
1. Preheat oven to 350 degrees F
2. Drain peaches, reserving 1/4 cup syrup
3. Finely chop 1 cup peaches and set aside
4. In blender, combine remaining peaches, butter, eggs and reserved peach syrup and lemon juice.
5. Blend until just smooth
6. Stir together dry ingredients
7. Add egg mixture and stir until moistened
8. Fold in reserved peaches & nuts
9. Bake in greased 8 x 4 x 2 inch loaf pan for ONE HOUR
10. Spread with peach preserves
11. Cool in pan 10 minutes
12. Remove & cool on rack
