Peach Muffins

Ingredients:
1 large egg
1 cup milk
4 tablespoons butter, melted
2/3 cup sugar
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 teaspoon fresh lemon juice
1/4 teaspoon vanilla
2 cups all-purpose flour
1 tablespoon baking powder
2 peaches, pitted and chopped but not peeled (about 1 1/2 cups)
Directions:
1. Preheat oven to 350°F
2. Beat egg in a large mixing bowl.
3. Stir in milk, butter, sugar, salt, cinnamon, lemon juice and vanilla.
4. Sift flour and baking powder together.
5. Stir flour mixture into egg mixture, mixing only until just blended.
6. Gently fold in the peaches.
7. Spoon into greased muffin cups, filling each only 3/4 full.
8. Bake 20 minutes.
