Ingredients:
2-29 oz. cans peach slices drained
1 tbs, corn starch
2 tbs. lemon juice
2 tbs, butter cut into small peices
1/2 cup flour
1/2 cup granulated sugar
1/2 tsp. baking powder
1/4 tsp, salt
1 egg slightly beaten
2 tbs. butter melted
1/2 tsp. vanilla
3/4 cup flaked coconut
1 cup whipping cream
2 tbs. powder sugar
Directions:
1. Preheat oven 375
2. for filling:
3. in large bowl combined drained peaches cornstarch and lemon juice toss well
4. Pour into a 2 quart baking dish dot with butter 2 tbs. spoons{use square baking dish}
5. ake 20 minutes till bubbly
6. Meanwhile for topping: in medium bowl combined Flour granulated sugar baking powder and salt
7. Add Egg, melted butter vanilla stir well
8. fold in 1/4 cup coconut Dallop topping over filling sprinkle with remaining coconut Bake for 35 minutes cover with foil
9. after 0 minutes cover with foil to prevent over browining cool 30 minutes
10. Ina chilled bowl combined cream pwder sugar beat on medium high speed untill soft peeks form
11. seve warm cobbler with whipped cream
