Peach Cake - Pareve

This is a very easy cake to prepare and the flavor and texture are lovely.
Ingredients:
3 eggs, well beaten
1 tsp. vanilla
1-3/4 cup sugar
1 cup cooking oil
2 cups flour, i like to sift the flour even though it's not necessary.
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 cups sliced peaches, canned or fresh
1/2 cup walnuts, chopped
Directions:
1. Beat eggs well and then add 1 tsp. vanilla and whisk well.
2. Combine all ingredients except peaches thoroughly by hand.
3. Gently fold in peaches and walnuts.
4. Pour in a greased and floured 13 x 9 pan.
5. Bake at 375 degrees for 50 minutes.
6. If you like, a dusting of confectioners' sugar is always nice.
