We love peaches, and this is a breeze to make and tasty too!
Ingredients:
3 cups diced fresh peaches
1/4 cup peach nectar
1 teaspoon vanilla extract
1/2 cup butter, softened
1 cup granulated sugar
3 eggs
2 3/4 cups all-purpose flour
1 1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon
*note: i just save the juice when i'm slicing the peaches.
Directions:
1. Simmer diced peaches with peach nectar until peaches are tender, about 5 to 8 minutes.
2. Remove from heat, add vanilla, and set aside.
3. In a mixing bowl, cream butter and sugar.
4. Add eggs, one at a time, blending well.
5. Combine with peach mixture.
6. In another bowl, combine flour, baking powder, salt, baking soda, and cinnamon.
7. Add dry ingredients to the peach mixture.
8. Mix just until blended.
9. Spread batter into a greased and floured 9x5x3-inch loaf pan.
10. Bake at 350 degrees for about 55 to 65 minutes, until a toothpick inserted in center comes out clean.
11. Cool on a rack in pan for 10 minutes.
12. Remove from pan to cool completely.
