I found this recipe in Pop It, Stir It, Fix It, Serve It. I have not tried this recipe, but I'm posting it for safe keeping.
Ingredients:
15 ounces canned sliced peaches, drained (in light or heavy syrup)
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons baking powder
1 cup sugar
1/3 cup cooking oil
1 egg
1/4 cup bottled lemon juice
1 teaspoon vanilla extract
1/2 cup chopped nuts (optional)
2 -3 tablespoons peach preserves (optional) or 2 -3 tablespoons marmalade (optional)
Directions:
1. Preheat the oven to 350. Coat a 9x5-inch loaf pan with nonstick spray or cooking oil.
2. In a medium sized mixing bowl, beat the peaches with an electric beater until they resemble chunky applesauce. (You want some little pieces).
3. In another medium sized mixing bowl, combine the flour, baking soda, salt, and baking powder, using a fork to stir and distribute. Add the sugar, oil, egg, lemon juice, and vanilla extract to the peaches, mixing just until blended. Add the flour mixture to the peach mixture, beating or stirring until completely moistened. Stir in the nuts if desired.
4. Pour the batter into the prepared pan and bake for 55-60 minutes, or until a knife inserted in the center of the bread comes out clean. Let stand for 10 minutes, then remove the bread from the pan. Spread preserves on top to glaze, if desired. Cut into 18 - 1/2-inch slices.
