Peach and Oat Muffins

This is a variation on another recipe I found a long time ago on another site.These are good for for a quick breakfast, lunch boxes, etc. If you cannot get self raising flour, use regular flour and about 1 teaspoon of baking powder.
Ingredients:
1 1/2 cups milk
1 1/4 cups quick-cooking oats
1 1/2 cups self raising flour
1/2 teaspoon salt
1 egg
1/2 cup packed brown sugar
1/4 cup butter, melted
2 teaspoons vanilla
1/2 teaspoon orange zest
1 1/2 cups canned peaches, drained and sliced
Directions:
1. Preheat oven to 400°F (200°C). Lightly butter or spray non-stick muffin pans or line with paper baking cups.
2. Combine milk and oats in a bowl. Leave for 5 minute
3. In large bowl, combine flour, salt and nutmeg.
4. Whisk egg, brown sugar, butter, vanilla and lemon rind into oat mixture. Pour over dry ingredients and sprinkle with peaches. Stir just until moistened.
5. Spoon into prepared muffin pan. Bake for about 30 min or until tops are golden brown and firm to the touch.
