A yummy cobbler dish that has 153 calories, 2 grams of fat, 34 grams of carbs, 3 grams of fiber and no cholesterol. Adapted from a Diabetic cooking magazine.
Ingredients:
3 cups peeled peaches (fresh or frozen and thawed)
1 cup blueberries
2 tablespoons granulated sugar
1/4 teaspoon ground nutmeg
2 tablespoons old fashioned oats (uncooked)
2 tablespoons rice cereal
2 tablespoons all-purpose flour
1 tablespoon packed brown sugar
1 tablespoon light butter
1/8 teaspoon ground cinnamon
Directions:
1. Preheat oven to 375
2. Combine peaches and blueberries in an ungreased 8 inch round baking dish
3. Combine sugar and nutmeg in a small bowl
4. add fruit and toss to combine
5. In a separate bowl combine oats, cereal, flour, brown sugar, butter and cinnamon.
6. Sprinkle oat mixture over fruit
7. Bake, uncovered for 35-40 minutes or until top is golden brown and peaches are tender
8. Serve in small dessert dishes and enjoy!
