An easy side dish with lots of fiber!
Ingredients:
2 cups chicken broth or 2 cups vegetable broth
3 cloves garlic, minced
1 tablespoon chopped fresh basil
1/2 medium onion, chopped
1 cup dried split peas
Directions:
1. Bring broth to boil in a medium saucepan.
2. Add the garlic, basil, onion and split peas and return to boil.
3. Reduce heat, cover and simmer until liquid is absorbed and peas are tender, about 30 minutes.
