PB and J Cheesecake Bars

Ingredients:
15 reduced-fat vanilla wafers, crushed
2 tablespoons butter, melted
1 teaspoon sugar
cooking spray
1 (8-ounce) block 1/3-less-fat cream cheese
1/4 cup creamy peanut butter
1/3 cup sugar
1 large egg
1 teaspoon vanilla extract
1/3 cup seedless blackberry fruit spread
1 reduced-fat vanilla wafer, crushed
Directions:
1. Preheat oven to 350°.
2. Combine first 3 ingredients; press into bottom of an 8-inch square baking pan coated with cooking spray. Bake at 350° for 6 minutes.
3. Beat cream cheese and peanut butter with a mixer at medium speed until creamy. Add sugar and egg, beating well. Stir in vanilla.
4. Spread blackberry spread evenly over crust. Pour cream cheese mixture over fruit spread; sprinkle with remaining crushed vanilla wafer. Bake at 350° for 14 minutes or until almost set. Cool 30 minutes. Cover and chill 1 1/2 hours.
