another international dessert recipe sent to me by a friend- meringue dessert to be filled with fresh fruit etc. Elegant and eye appealing. Please follow instructions carefully !
Ingredients:
4 egg whites
1 1/4 cups fine sugar ( caster sugar-fine granulated sugar )
1 tsp white vinegar
1 tsp vanilla
1 tbsp cornflour (cornstarch)
Directions:
1. Heat oven to 350 (180).
2. Using an electric mixer, beat egg whites and sugar
3. for 10 minutes, or till thick and glossy.
4. Mix vinegar. vanilla, andcornflour together.
5. Add to meringue.
6. Beat on high speed for a further fiveminutes.
7. Line an oven tray with baking paper.
8. Draw a 22 cm circle (approx 8 inch circle) on the baking paper.
9. Spread the Pavlova mixture to within 3/4 of an inch inside the edge of the circle, keeping the shape as round andeven as possible.
10. Smooth top surface over.
11. Place Pavlova in oven.
12. Turn oven temperature down to 210 F (100 C).
13. Bake Pavlova for one hour.
14. Turn oven off.
15. Open oven door slightly and leave Pavlova in oven till cold.
16. Carefully lift Pavlova onto a serving plate.
17. Decorate with shipped cream and fresh fruit such as sliced kiwifruit and strawberries etc
