Found the original of this recipe on . Haven't tried it yet but I wanted to post on here to see if I could get more accurate nutritional data since I'm using leaner ingredients and adding some veggies.
Ingredients:
5 slices turkey bacon, diced
1 small onion, finely chopped
2 garlic cloves, minced
4 ounces lean ham, diced
1 lb chicken breast
1 bell pepper, sliced thin and cut into bite size pieces
1 cup mushroom, diced
1 cup reduced-fat mexican cheese blend
black pepper
crushed red pepper flakes
Directions:
1. Place bacon pieces, garlic and onion in large skillet over medium-high heat, fry until bacon is crisp. Drain if necessary.
2. Add ham and chicken to skillet. Cook, stiring occassionally, until chicken is about half cooked.
3. Add bell pepper and mushrooms and cook until veggies are tender and chicken is cooked through (no longer pink).
4. Add cheese and spices and cook until everything is coated and cheese is melted.
5. Serve with pasta, rice or potatoes.
