Another one of my childhood memories, was the Italian Potato salad my mom made. To this day I still enjoy it and just wanted to share this recipe!
Ingredients:

2/3 cup extra virgin olive oil
1 tbsp oregano
2 red onions sliced very thin
10 large red potatoes, largely cubed
salt and black pepper to taste
Directions:
1. Preparation:
2. In a large bowl, combine Oil, Oregan, salt and pepper.
3. Add onions
4. Boil potatoes in a large pot of salted water, for about 15-20. (tender)
5. Drain and cool.
6. Add potatoes to above mixture. Toss to coat and chill for a few hours. Serve cold.
7. Note: It is not traditional to add vinegar to this salad, but you can add it if you'd like. (Personal preference) Some add garlic, celery etc. This is meant to be a very simple salad. Sometimes less is more!
