Pat Nixon's California Fruit Salad

Ingredients:
8 oz nonfat plain yogurt
2 tbsp thawed orange juice concentrate
2 tbsp mint leaves
1 tbsp honey
1 small head of iceberg lettuce cut into 8 wedges
1 small can mandarin oranges, drained
6 fresh peaches, halved and pits removed
1 pint fresh strawberries, sliced in half
1 cantaloupe (seeded, sliced, and rind removed)
1/2 cup shelled and chopped pistachios
combine yogurt, orange juice, honey, and mint for dressing.
Directions:
1. To assemble salad, on individual serving plates place a wedge of lettuce on each plate. Place remaining fruit over lettuce wedges on each plate. Drizzle dressing on top or serve to the side.
