Pastor's Wife's Peach Pie

This is a recipe that has been in our family for who knows how long. My mother, a pastor's wife, once gave it to a local produce stand that began publishing the recipe in its annual cookbook under the name Pastor's Wife's Peach Pie . It's really an incredibly easy, custard-based, peach pie. Free Stone peaches make it a lot easier to take the fruit off the pit, but if all you have are cling, just slice the peaches.
Ingredients:
1 cup half-and-half
1 cup sugar
1/3 cup flour
1 egg, beaten
1 teaspoon vanilla
3 -5 free stone peaches
1 unbaked pie shell
Directions:
1. Preheat the oven to 450°F.
2. Peel the peaches and cut in halves. Separate the fruit from the pit.
3. Arrange the peach halves face down in the pie crust.
4. Mix the flour and sugar together. Then add the half and half, egg, and vanilla. Mix well.
5. Pour the custard mix over the peaches.
6. Bake at 450°F for 10 minutes. Lower heat to 350°F for 50 minutes or until the custard is set.
7. Remove from the oven and cool on a rack.
