A nice vegetarian lasagna!
Ingredients:
1 (8 ounce) package mushrooms
4 ripe plantains
6 eggs
1 bunch fresh scallions
1 medium red pepper
1 medium yellow pepper
adobo seasoning, to taste
oregano, to taste
salt, to taste
cumin, to taste
1 packet goya sazon goya
1 teaspoon capers
2 teaspoons pimento stuffed olives, chopped
1 medium onion
4 cloves garlic
1/2 cup tomato paste
cheddar cheese, shredded
mozzarella cheese, shredded
Directions:
1. Sautee all vegetables and seasoning.
2. Slice plantains; fry plantain slices.
3. Mix 3 eggs with Adobo.
4. Pour into bottom of lasagna dish.
5. Place one layers of plantains in bottom, then cheese, then veggie mix, then cheese, then plantains.
6. Mix 3 eggs with Adobo.
7. Pour on top of the other layers in the lasagna dish.
8. Bake at 350 degrees for 25 minutes or until eggs/top is browned.
