BRAZILIAN STREET FOOD - LITTLE PASTRIES FILLED WITH CHEESE AND TOMATO.... I HAVE EVEN MIXED CHEESE AND CORN ... Ingredients:
pastry |
300 g flour |
5 ml salt |
30 ml veg oil |
15 ml cachaca or vodka (optional - but i like it hehehehe) |
15 ml white wine vinegar |
125 ml water |
filling |
205 g tomato & onion mix (can) |
15 ml brown sugar |
15 ml balsamic vinegar |
15 ml oregano, chopped |
10 ml crushed garlic (dried) or 1-2 cloves garlic crushed |
250 ml grated cheddar (i use mozzarella instead) |
Directions:
1. MIX ALL THE PASTRY INGREDIENTS TOGETHER 2. KNEWAD FOR A MINUTE THEN SET ASIDE TO REST FOR 10 MINUTES 3. ROLL SMALL PIECES OF DOUGH INTO 10X10CM SIZED SQUARES 4. MIX ALL THE FILLING INGREDIENTS TOGETHER 5. TOP ONE HALF OF EACH SQUARE OF DOUGH WITH A GENEROUS DOLLOP OF FILLING 6. BRUSH EDGES OF DOUGH WITH WATER AND FOLD TO ENCLOSE FILLING 7. CRIMP WITH A FORK TO SEAL 8. HEAT 2CM OIL IN A PAN AND FRY PASTRIES UNTIL GOLDEN ALL OVER 9. DRAIN ON KITCHEN PAPER AND SERVE WARM 10. I SERVE IT WITH SWEET CHILLI SAUCE MOST OF THE TIME 11.
