Ingredients:

Directions:

  1. Cook pasta according to package directions, drain reserving a little liquid with the pasta (to keep pasta from sticking together) and return to cooking pan to keep warm.
  2. Drain clam juice into liquid measuring cup and add enough skim milk to the clam juice to equal 1 cup total. Skim milk listed in recipe is approximate, you may need a little more or less. Set aside.
  3. Combine the following into a small prep bowl and set aside: flour, oregano, salt, and pepper
  4. Cook onion, garlic and butter in medium saucepan until tender, but not brown on medium to medium low heat.
  5. Add flour mixture to saucepan and stir to combine.
  6. Add milk/clam juice mixture and wisk together. Cook and stir contantly until thick and bubbly (hint: use wooden or silicone spatula or spoon to stir). Then cook 1 additional minute while stiring slowly.
  7. Add and stir in minced clams, parsley and wine and heat through (about 1.5 minutes on medium low).
  8. Plate pasta and pour on the sauce.
  9. If desired, sprinkle with Parmesan cheese at the table, but don't forget to add the additional calories - you really won't miss the cheese if you go without it but it's a good idea to offer it to guests.
