Pasta With Cauliflower, Currant and Nuts

Delicious and vegetarian.
Ingredients:
1 1/2 cups ricotta cheese
1/3 cup parmesan cheese, grated
1/2 cup milk or 1/2 cup light cream
1 pinch nutmeg
1/2 lb rotini pasta or 1/2 lb ziti pasta
3 tablespoons olive oil
1 small cauliflower, cut into bite size pieces
1 egg, beaten
2 garlic cloves, minced
1/3 cup walnuts, chopped
1/3 cup currants or 1/3 cup raisins
2 tablespoons butter
salt, to taste
pepper, to taste
Directions:
1. Combine first 4 ingredients in a small bowl and set aside.
2. Cook pasta according to box, drain.
3. Heat 2 tablespoons of olive oil over medium heat in a skillet. Stir fry cauliflower untik tender, crisp.
4. Beat egg in a large bowl and add hot cauliflower, toss until coated.
5. In same skillet, heat remaining oil and saute garlic over medium low heat until golden. Add cauliflower and cook until egg is set.
6. Add nuts, currants, butter, salt, pepper and ricotta mixture. Simmer until heated through.
7. Toss with pasta.
