Pasta Vasul-beans And Macaroni

My Mom used to make this all the time. She finally gave me her recipe that she got from my Nona. My husband and kids love it.
Ingredients:
1 stick of hormel pepperoni
1/4 c extra virgin olive oil
1 medium onion chopped
1 bag large dry white northern beans washed and sorted
1 large fresh tomato wedged
2 cloves of fresh garlic
3 quarts or so of water
2 or so t salt
1 tbsp of basil
1 tbsp of oregano
1/4 to 1/2 t pepper
2 cups of elbow macaroni
Directions:
1. Bring beans to a boil in about 3 quarts of water.
2. Cover and simmer 30 minutes.
3. Strip pepperoni of skin and slice. Add to beans with a little more water if needed. (Texture should be between soup and stew)
4. Also add onion, tomato, olive oil, garlic, basil and pepper.
5. Cover and simmer until beans are nearly done. (one hour or so)
6. Add salt and oregano.
7. Simmer for 10 minutes longer and add elbow macaroni.
8. Simmer until macaroni is just done.
9. Tastes even better the next day!
