Pasta Sausage and Green Peppers

Ingredients:
2 green peppers chopped
3 sausages cut into bite-sized pieces, or slightly larger
4 clove(s) garlic crushed or finely chopped
2 tablespoon(s) tomato paste
1 teaspoon(s) dried oregano
1/4 teaspoon(s) ground black pepper
1 can(s) (14.5 oz) diced tomatoes, undrained
2 cup(s) cooked tube pasta (penne, elbows, etc)
1/2 cup(s) feta cheese (optional)
1-2 tablespoon(s) dried parsley
Directions:
1. Cook sausage in a large non-stick skillet on medium-high heat until the sausage is mostly done.
2. Add garlic and green pepper until sausage is done and pepper is tender, but not mushy. (Skewer 3 sausages on the meat thermometer. It needs to read 160 or higher)
3. Add tomato paste, oregano, black pepper, and diced tomatoes, and cook over medium heat for about 5 min, stirring occasionally.
4. Place pasta and parsley in a large bowl. Add sausage mixture, and toss. Add feta here or on plates.
