Pasta Salad With Pesto And Fried Mushrooms

it's a simple pasta salad with fried mushroom, some thyme, tiny bits of bacon and some lightly roasted pine nuts. i was too tired to make a dressing, so i simply used some pesto that needed to die anyway. the result is a nice and hearty pasta salad that's packed with flavour. Read more . another plus: any leftovers make a great take-out for tomorrows lunch at work.
Ingredients:
250g fusilli
2-3 tablespoons of basil-pesto
1 shallot, finely diced
4 strips of streaky bacon, cut in small cubes or strips
150g cremini mushrooms, sliced
a hand full of fresh tyme
freshly ground salt and pepper
a hand full of lightly roasted pine nuts
Directions:
1. boil some salted water in a pan and cook the fusilli until al dente.
2. heat some olive oil in a frying pan, cook the shallots until just turning soft, add cremini mushrooms and cook until soft. then add the bacon and fry until lightly browned and add thyme. season with salt and pepper and mix well.
3. drain pasta, put in a bowl and mix with the pesto while pasta is still warm. then add mushroom mixture, mix well and sprinkle with the pine nuts.
4. tuck in!
