Dove Season opened this past week Weekend in Central Texas, and its tradition for all of my Family to spend Sunday afternoon out at my Aunt & Uncles.......The men spend the late afternoon/early evening hunting along the edge of the corn fields. Read more ....while the ladies put together dove diablos, and other yummy dishes to satisfy the hungry hunters when they come in from the fields! We have been having record heat here for the past few months so i wanted to make a cold salad to go along w our BBQ and this is what i came up with! ENJOY!
Ingredients:
2 - boxes bowtie pasta
red, yellow, orange & green bell peppers - diced
2 - bushels of chives - minced
2 - containers of garlic & herb feta cheese
1 - small can of pitted black olives
16-20 oz of your favorite italian dressing ( i use two of the good seasons italian packets)
fresh cracked black pepper
freshly grated parmesan cheese
Directions:
1. Boil the Bowtie Pasta until just al dente
2. While the pasta is boiling cut up all the bell peppers and sat aside
3. Prepare dressing if you are making your on or using the packets
4. Once the pasta is ready, drain and drizzle with a little bit of olive oil to prevent the pasta from sticking together, and allow to cool.
5. Once the pasta has cooled, transfer it to a very large Pasta Bowl.
6. Combine the pasta and half of the dressing, tossing to make sure all the pasta is coated, and add lots of fresh cracked pepper.
7. Top the pasta with the Feta Cheese,Diced Bell Peppers, Minced Chives, Black Olives and Freshly Grated Parmesan in that order.
8. Cover and let chill for at least 1 hour.
9. Right before serving pour on the remaining dressing, toss & serve!
10. Enjoy!
