This is one of my favoret side dishes. Great for dinner partys or BBQ's. Or if you are like me, you can have it for a light lunch or snack. Enjoy
Ingredients:
5 cups cold cooked fusilli pasta
1 can sliced black olives
1/2 red onion
3 tbsp sundried tomatos with the oil
1 head broccoli
5 radishes
2 pepers (red or yellow or orange)
1-2 inch piece of marbled chedar cheese
2 tsp oregano
3 tbsp olive oil
salt to taist
Directions:
1. First you need to cook the pasta
2. chop the sundried tomatos into small pieces and add it to the hot pasta
3. I like to add the broccoli pieces to the hot pasta just to soften it a bit
4. let the pasta cool
5. slice all the vegies and add to pasta
6. last cut cheese into small cubes
7. then add oregano and a good olive oil
8. salt to taist
9. mix well
10. serve and enjoy
