Like I used to make at The Wild Garlic.
Ingredients:
1 tbsp garlic
2 tbsp olive oil
1/2 red onion
1 cup shredded carrot
1/2 cup shredded red cabbage
1/2 cup broccoli
1/8 cup chopped green onions
12 oz can diced tomatoes
1 cup vegetable broth
1/2 cup white wine
4 tbsp grated parmesan
8 oz whole wheat pasta
1 tbsp basil
1 tbsp oregano
Directions:
1. Put pasta on.
2. In fry pan, put olive oil, garlic, and all vegetables. Cook until edible.
3. Deglaze with white wine, then add broth, tomatoes, and allow to reduce. Toss in Basil and oregano.
4. Add pasta.
5. Serve with cheese and green onions.
6. Eat.
