Pasta Fagioli Soup
Ingredients:
1 can (28 oz.) redpack diced tomatoes in juice
2 cans (15 oz.) great northern beans
1 can (14.5 oz.) chopped spinach, drained
2 cans (14.5 oz.) chicken broth
1 can (29 oz.) redpack tomato sauce
2 cups water
2 cloves garlic, minced
8 slices crisp cooked bacon, crumbled
1 tbsp. dried parsley
1 tsp. garlic powder
salt and pepper; to taste
1 tbsp. fresh chopped basil
8 oz. seashell pasta
Directions:
1. In a large stockpot, combine all above ingredients EXCEPT pasta.
2. Bring to boil; cover and simmer for about 40 minutes
3. Add pasta and cook uncovered, until pasta is tender; about 10 minutes
4. Ladle soup into individual serving bowls
5. Optional: Sprinkle mozzarella or Parmesan cheese
