This is my husband's original recipe. Serve with a crisp green salad and crusty Italian bread. It is an easy weeknight supper, or as a starter soup.
Ingredients:
3-4 tbsp extra virgin olive oil
1 can baby lima beans, drain and reserve liquid
1 can garbanzo beans, drain and reserve liquid
1 can white cannalini beans, drain and reserve liquid
2 cloves garlic, finely chopped
1/4 cup onion, finely chopped
1/4 cup tomato paste or 1 8-oz. can tomato sauce
1 can sodium free chicken broth
chopped fresh basil
ground red pepper to taste
1/2 lb. ditalini pasta
1/4 cup grated pecorino-romano cheese
Directions:
1. Saute onion and garlic in oil for 3 minutes.
2. Salt and pepper to taste.
3. Add tomato paste or sauce, reserved bean liquids and chicken broth to onion and garlic.
4. Cook on low for 15 minutes.
5. Add beans and simmer for 15 minutes.
6. Cook pasta separately. DO NOT mix pasta with tomato sauce.
7. Put generous serving of pasta in a bowl and heap bean mixture over pasta. Sprinkle with grated cheese.
