I love this soup! I adapted this recipe because it's just my husband and I so I made it smaller than most recipes for this soup.
Ingredients:
1/2 lb ground beef
1/2 small onion, chopped
1 carrot, chopped
1 garlic clove, minced
1 (14 1/2 ounce) can diced tomatoes
1 (15 ounce) can cannellini beans
1 1/2-2 cups chicken stock
3/4 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon black pepper
1/4 teaspoon thyme
1/2 cup small shell pasta
Directions:
1. Brown & drain ground beef.
2. Add onion & carrot, cook for about 3 minutes.
3. Add garlic & spices; mix thoroughly.
4. Add tomatoes, chicken stock, & beans.
5. Simmer for 20 minutes.
6. Add uncooked pasta & cook for another 10-12 minutes.
