Pasta and Peanut Salad

pasta salad with peanut butter dressing and lots of fresh veggies. From Jane Brody's Good Food book.
Ingredients:
1/2 c smooth peanut butter (natural)
2 tbsp reduced sodium soy sauce
2 tbsp fresh lemon juice
1 tbsp hot water
1 tsp red pepper flakes
1/4 tsp cumin
1/8 tsp turmeric
1 lb penne pasta
1 salt, if desired
1 tbsp oil
1/2 lb green beans, blanched and cut into 1/2 in pieces
2 large carrots, halved lengthwise and sliced thin crosswise
2 cucumbers,quartered lengthwise, seeded, and sliced thin crosswise
8 scallions, with green tops, sliced into 1/4 in pieces
Directions:
1. Cook pasta (with salt and oil added to the water) and rinse in cold water. Toss with vegetables.
2. Combine remaining ingredients (peanut butter through turmeric) in a small bowl.
3. When ready to serve, toss salad and dressing, and if desired, sprinkle peanuts over salad.
