Passover Sweet Potato and Prune Casserole

Ingredients:

Directions:

  1. Cook potatoes until tender.
  2. Peel & cut into 1/4 thick slices.
  3. Cut prunes in 1/2 & remove pits.
  4. Combine honey, cinnamon, salt, juices, & melted margarine.
  5. In a casserole arrange alternate layers of potatoes & prunes; pour some honey mixture over each layer.
  6. Bake uncovered at 350 degrees F. for 45 minutes, basting occasionally.
