While searching for Passover recipes I came across this one for doughnuts. Who can pass up a doughnut? : ) It sounded interesting enough to share. Because this is my first time making them, the servings indicated are a guess-timate. Ingredients:
2/3 cup water |
1 tablespoon sugar |
1/4 teaspoon salt |
1/2 cup oil |
1 cup matzo meal |
3 eggs |
cinnamon-sugar mixture |
chopped nuts (optional) |
Directions:
1. Bring water, salt, sugar and oil to a boil. 2. Stir in matzo meal. 3. Remove from flame, cool slightly. 4. Beat in eggs, one at a time. 5. Grease hands and roll dough into balls 2- inches in diameter. 6. Sprinkle tops with mixture of sugar and cinnamon (and nuts). 7. Dip finger in cold water and press a hole in center of each ball. 8. Place on greased cookie sheet. 9. Bake at 375 degrees F for one hour. |
