This recipe for Apple Cake has been popular for many years and is often served at Seders. It is the best Apple Cake you'll ever taste!!!
Ingredients:
2 eggs
1 cup vegetable oil
1 cup white sugar
1-1/2 cups matzo meal
1/2 cup potato starch
1 teaspoon ground cinnamon
4 large apples - peeled, cored and sliced
1/2 cup brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
note: this recipe is easily doubled.
Directions:
1. Preheat oven to 350 degrees F (175 degrees C)
2. Grease a 9 x 13 inch glass baking dish.
3. Combine eggs, oil and sugar in large bowl with electric mixer.
4. Stir in matzo meal, potato starch and 1 teaspoon cinnamon.
5. In a separate bowl, toss apples with brown sugar, 1 teaspoon cinnamon and nutmeg.
6. Layer half of the dough into the prepared 9x13 inch dish.
7. Pour the apples into the dish then dab remaining dough over the apples.
8. Sprinkle with some brown sugar, if desired.
9. Bake in a preheated 350 degrees F (175 degrees C) oven for 45 minutes.
10. Makes 12 to 16 servings.
