Parve (non-dairy) Corn Muffins

We love corn muffins but needed a non-dairy version. My husband experimented and finally came up with this recipe. This is a sweet corn muffin.
Ingredients:
1 c white cornmeal
1 c flour
1/2 c sugar
1/2 tsp kosher salt
2 tsp baking powder
1/4 c parve margarine, melted
1 egg
1/4 c honey
8 oz vanilla soy milk
Directions:
1. Preheat oven to 400 deg.
2. In large bowl, stir together all dry ingredients.
3. In separate bowl, melt margarine and beat in egg. Mix in honey and soy milk.
4. Add mixture to dry ingredients. With a wooden spoon, gently mix until well combined.
5. Divide into 12 paper-lined muffin cups and bake 18-20 minutes or until tops spring back when pressed lightly.
