Party Size Chocolate Cherry Mousse

What can I say, this mousee knocks them dead every time. party size, extravagant, sweet, creamy, smooth and everyone wants the recipe!
Ingredients:
2 pkg, 12 0z each top quality semi sweet chocolate morsels
1 pkg, 6 0z top quality semi sweet chocolate morsels
3 cups heavy cream
1 lb jar of pitted sweet or sour cherries red or black - dained ,reserve cherry liquid
1 dozen eggs, room temperature separated, clean uncracked
1/4 cup sugar
garnish: whipped cream rosettes and maraschino cherries garnish if desired
Directions:
1. Prep time does not include chilling time
2. Place chocolate in a heavy duty sauce pot with 12 Tbs of reserved cherry liquid and melt chocolate over lowest heat until melted in smooth.
3. One can do this in a microsafe bowl, microwaving high power for several minutes, checking to make sure mixture is melting and stirring till smooth.
4. Either way, one must not over cook chocolate or it will sieze and harden.
5. When chocolate is stirred smooth, set aside to cool a bit
6. Beat in yolks one at a time to incorporate well
7. In another large bowel, whip cream to soft peaks and then gently fold into cooled chocolate.
8. Stir in the drained cherries.
9. With clean beaters beat whites till foamy and then increase speed and beat till almost stiff.
10. Gradually add sugar and beat till stiff but not dry.
11. Fold egg whites into chocolate mixture gently until well blended.
12. Place mixture into a l glass punch bowl if you have it, cover with plastic wrap and chill overnight.
13. Then garnish as desired.
14. Yield: 20 or more 1/2 cup servings
15. Note: recipe may be reduced easily for smaller quantities
16. Note: one may substitute a bit of Kirsch or cherry brandy for the cherry liquid if desired
