Ingredients:
1/3 cup finely chopped fresh parsley
3 tablespoons finely chopped green onions
3 tablespoons minced red onion
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
1/4 teaspoon salt
1/8 teaspoon ground red pepper
1 pound large shrimp, cooked and peeled
Directions:
1. Combine first 7 ingredients; add shrimp, tossing well. Cover and chill at least 3 hours.
