Great at Parties. Ingredients:
24 vanilla wafers |
2 8-oz. pkgs. cream cheese |
2 eggs |
3/4 c. sugar. |
1 t. lemon juice |
1 tsp. vanilla |
pie filling (cherry, strawberry, blueberry, etc.) |
Directions:
1. Place a Vanilla Wafer in the bottom of a paper cupcake liner in muffin pan. (24)
2. Mix together well the cream cheese, eggs, sugar, lemon juice, and vanilla.
3. Spoon mixture on top of wafer until 2/3 full.
4. Bake at 350 for 15-18 minutes.
5. Cool.
6. Top with pie filling of your choice.
