Simple, delicious and healthy. Great for those really special dinners. Ingredients:
1 bunch fresh broccoli or 2 (10 ounce) packages frozen broccoli |
2 tablespoons butter |
2 tablespoons minced onions |
1 1/2 cups sour cream |
2 teaspoons sugar |
1 teaspoon white vinegar |
1/2 teaspoon poppy seed (optional) |
1/2 teaspoon paprika |
1/4 teaspoon salt |
1/3 cup chopped cashews |
Directions:
1. Cook fresh broccoli until crisp-tender and drain. 2. If using frozen broccoli, cook according to package directions and drain. 3. Set aside. 4. In a small pan, melt butter; saute onion. 5. Remove from heat and stir in sour cream, sugar, vinegar, poppy seed, paprika and salt. 6. Arrange broccoli on a platter or shallow dish and pour sour cream sauce over it. 7. Sprinkle cashews over sauce. 8. VARIATION:. 9. Place cooked broccoli in a 1 1/2 quart casserole. 10. Pour sauce over top, sprinkle with cashews and bake in a preheated 350ºF oven for 15-20 minutes. |
