Simple, delicious and healthy. Great for those really special dinners.
Ingredients:
1 bunch fresh broccoli or 2 (10 ounce) packages frozen broccoli
2 tablespoons butter
2 tablespoons minced onions
1 1/2 cups sour cream
2 teaspoons sugar
1 teaspoon white vinegar
1/2 teaspoon poppy seed (optional)
1/2 teaspoon paprika
1/4 teaspoon salt
1/3 cup chopped cashews
Directions:
1. Cook fresh broccoli until crisp-tender and drain.
2. If using frozen broccoli, cook according to package directions and drain.
3. Set aside.
4. In a small pan, melt butter; saute onion.
5. Remove from heat and stir in sour cream, sugar, vinegar, poppy seed, paprika and salt.
6. Arrange broccoli on a platter or shallow dish and pour sour cream sauce over it.
7. Sprinkle cashews over sauce.
8. VARIATION:.
9. Place cooked broccoli in a 1 1/2 quart casserole.
10. Pour sauce over top, sprinkle with cashews and bake in a preheated 350ºF oven for 15-20 minutes.
