Parsnips Baked With Raisins

Very different, very tasty and always a nice surprise to the standard side dishes. I don't make this often but when I do, I always get big thank yous. It's impressive enough to serve at an elegant dinner party yet easy and tasty enough for a casual dinner with family and/or friends.
Ingredients:
6 medium sized parsnips
1 teaspoon salt
1/4 teaspoon grated nutmeg
2 tablespoons honey
4 eggs lightly beaten
1/2 cup chopped green pepper
4 tablespoons butter
1/3 cup raisins
Directions:
1. Preheat oven to 350.
2. Cook parsnips in boiling salted water 30 minutes or until tender. Plunge into cold water then peel and remove woody center fibers.
3. Mash or blend with eggs, salt, honey and nutmeg.
4. Sauté chopped green pepper in butter then add raisins and stir into parsnip mixture.
5. Bake in buttered casserole dish 15 minutes.
6. Also good baked in the roasting pan with pork.
