Parsnip Raisin Delight

Ingredients:
6 medium parsnips
1 teaspoon salt
1/4 teaspoon grated nutmeg
2 tablespoons honey
4 eggs lightly beaten
1/2 cup chopped green pepper
4 tablespoons butter
1/3 cup raisins
Directions:
1. Preheat oven to 350.
2. Cook parsnips in boiling salted water 30 minutes or until tender.
3. Plunge into cold water then peel and remove woody center fibers.
4. Mash or place in blender with eggs, salt, honey and nutmeg.
5. Sauté chopped green pepper in butter then add raisins and stir into parsnip mixture.
6. Bake in buttered casserole 15 minutes.
