This recipe came from a cookbook that was sold as a fund raiser. It is a very good potato side dish and goes with meat, fish or poultry.
Ingredients:
2 lbs red potatoes, washed and cubed
1/4 cup fresh parsley, chopped
4 cloves fresh garlic, chopped
1 chicken bouillon cube
1/4 cup water
1 tablespoon butter
1 tablespoon olive oil
Directions:
1. Boil cubed potatoes about 20 minutes (don't overcook), drain In a saucepan, mix 1/4 cup water with chicken cube, garlic, chopped parsley, butter and olive oil Bring to a boil and cook for 2 minutes Pour mixture over drained potatoes and stir to mix.
