2 6-ounce cans of tuna packed in water (drained)
1 tablespoon extra-virgin olive oil
1/4 teaspoon black pepper
1/2 cup fresh flat-leaf parsley, roughly chopped
1 tablespoon capers, roughly chopped
1 teaspoon lemon zest
2 teaspoons lemon juice
Directions:
1. In a medium bowl, combine the tuna, pepper, olive oil, parsley, capers, lemon zest, and lemon juice. Spread the mixture on your favorite bread or roll.
