Parmesan Rice

A bit different...
Ingredients:
1 1/2 cups rice
1/2 cup chopped onion
1/4 cup butter or 1/4 cup oil
3 cups boiling water
1 cup white wine
3 tomatoes, chopped
1 1/2 teaspoons salt
1 dash pepper
3/4 cup grated parmesan cheese
1 cup pitted black olives
Directions:
1. Brown rice and onions in butter or oil.
2. Add 3 cups boiling water.
3. Cover. Cook until rice is nearly done.
4. Add 1 cup white wine, 3 tomatoes, chopped, 1 1/2 t. salt, dash pepper.
5. Cook 12 minutes. Stir in 3/4 cup grated Parmesan and 1 cup pitted black olives, sliced.
6. Heat thoroughly and serve.
