These pita triangles are heavenly... AND simple!! A must for pasta dishes. These triangles are so incredibly versitile. In addition to cheese you can also use pepperoni, sausage, chopped herbs, or even use sauce and make a pita pizza! Read more ! This recipe is from a cookbook by Katie Wilton. Bon Appetit!
Ingredients:
2 pita pockets - white or wheat
4 tablespoons butter - softened
1 cup grated parmesan
additional toppings optional - see intro for suggestions, or invent your own
Directions:
1. Using cooking scissors, cut pita pockets in half, then open and seperate sides (you will have 4 semi-circular pieces)
2. Spread about a half-tablespoon of butter on each semi-circle
3. Cut each semi-circle in half and sprinkle with cheese (plus any additional toppings)
4. Place wedges on aluminum foil in toaster oven and toast until cheese is melted and pitas are light brown
5. Serve warm
