A great alternative to plain old mashed potatoes.
Ingredients:
4 large potatoes, chopped coarsely (1.2kg)
40 g butter
3/4 cup milk
1 cup finely grated parmesan cheese
Directions:
1. Boil, steam or microwave potatoes until soft; drain well.
2. Mash potatoes in a large bowl with remaining ingredients until smooth.
