Parmesan Basil Fritatta

There's nothing better than a fritatta when friends come for breakfast. This one is especially tasty.
Ingredients:
1/2 cop sour cream
8 large eggs
salt and pepper, to taste
2 tablespoons fresh or 1 1/2 teaspoons dried basil
2 tablespoons butter
2 tablespoons olive oil
1/3 cup scallions, chopped
1/2 grated parmesan cheese
Directions:
1. Combine sour cream, eggs, salt and pepper and basil in a bowl.
2. Preheat broiler.
3. Heat butter and oil in an ovenproof skillet.
4. Saute scallions for 1 minute.
5. Add egg mixture to skillet.
6. Cook eggs almost done, lifting edges to allow wet egg to cook.
7. Remove from heat.
8. Sprinkle with Parmesan cheese.
9. Broil until cheese turns golden and eggs are completely cooked.
10. Remove skillet from oven.
11. Turn fritatta onto serving platter.
12. Serve.
