Panko Breaded Onion Rings

My boyfriend purchased an onion that cost $5.00 (can you believe that price???) so I felt the need to do something special with it. It WAS super sweet and delicious (better be for 5 bucks!!!)
Ingredients:
2 big sweet onions, peeled and sliced thin into rings
dipping mixture
2 eggs
1/2 cup buttermilk
crispy coating mixture
2 cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon cajun seasoning
1 teaspoon dried parsley, crushed with your fingertips
2 tablespoons cornstarch
1 cup panko breadcrumbs
canola oil (for frying)
Directions:
1. Heat the oil to about 350 degrees.
2. In small bowl whisk together buttermilk and eggs. Soak sliced onions in this for 15 minutes up to an hour
3. In a bowl mix together the coating mixture, and then place into a shallow dish (a shallow dish makes for easier coating of the rings). Place the panko breadcrumbs into another shallow dish.
4. Remove the onion rings from buttermilk mixture and place on plate. Save the buttermilk mixture.
5. Dip and coat the onion rings with the flour mixture, dip back into the buttermilk mixture then coat generously in the panko.
6. Fry briefly in hot oil (turning once) until onion rings are lightly brown on both sides. Place paper towels on a large baking sheet to drain the onion rings.
7. When ready to serve, reheat the onion rings on a parchment lined baking sheet at 400 degrees for 8-10 minutes, or until golden brown.
