This is from Todd Wilburs book Low Fat Top Secret Recipe , this is actually my full fat version. His way of cooking the chicken is quite gross and not worth the hassle plus it just doesn't taste right. The sauce is great and very close and what you get at the mall.
Ingredients:
sauce - 1 1/2 c. of water
2 tbs. orange juice
1 c. packed brown sugar
1/3 c. rice vinegar
2 1/2 tbs. soy sauce
1/2 tsp. minced ginger
1/4 tsp. minced garlic
1 rounded tbs. of chopped scallion
1/4 tsp. crushed red pepper flakes
5 tsp. cornstarch
2 sp. arrowroot
chicken - 4 skinless, boneless chicken thighs cut into bite size chunks
1/3 cup of corn starch
1/4 cup of flour
1/4 tsp. of white pepper
1 tbs. of soysauce
vegetable oil for frying
Directions:
1. Marinate chicken with the soy and white pepper, mix well and set aside.
2. Combine all of the sauce ingredients except the cornstarch and arrowroot in a small saucepan over highheat.Stir often and bring mixture to a boil then set aside and let cool.
3. Combine the flour and cornstarch for the chicken in a bowl or large plastic baggy. Place chicken in bowl or baggy to coat with mixture. Fry pieces of chicken in oil over medium heat and cook until done and brown and crisp. Drain over rack or paper towels.
4. Combine Cornstarch and arrowroot for sauce in a small bowl and add 3 tbs. of water. Stir untl dissolved. Pour mixture into sauce and cook over high heat again. Sauce will begin to thicken, making it ready.
5. Place the chicken in a large serving dish and pour sauce directly onto chicken. Stir gently until well coated.
